Chinese Dumplings Recipe (Pork)

Origin and History:

Dumplings are a staple of Chinese cuisine and have been enjoyed for centuries. Their history can be traced back to the Han Dynasty, over 1,800 years ago. Legend has it that Zhang Zhongjing, a famous Chinese medicine practitioner, invented dumplings as a remedy for colds and frostbite during the winter months.

Ingredients:

To make Chinese dumplings, you will need:

Dough:

- 2 cups all-purpose flour

- 1/2 cup warm water

Filling:

- 1 lb ground pork

- 1/2 cup Chinese cabbage, finely chopped

- 2 green onions, finely chopped

- 2 garlic cloves, minced

- 2 tbsp ginger, minced

- 2 tbsp soy sauce

- 2 tsp sesame oil

- 1 tsp sugar

- 1 tsp salt

- 1/2 tsp black pepper

- 1 egg, beaten (optional)

Dipping Sauce:

- 1/4 cup soy sauce

- 1/4 cup rice vinegar

- 1 tbsp sesame oil

- 1/2 tsp sugar

- 1 garlic clove, minced

Instructions:

1. To make the dough, mix the flour and warm water in a bowl until a dough forms. Knead the dough for 5-10 minutes until it becomes smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

2. To make the filling, combine the ground pork, Chinese cabbage, green onions, garlic, ginger, soy sauce, sesame oil, sugar, salt, black pepper, and beaten egg (optional) in a bowl, and mix well.

3. To make the dumplings, roll out the dough into a long strip about 1/4 inch thick. Use a round cutter or a glass to cut out circles of dough.

4. Place a spoonful of filling in the center of each circle of dough. Use your fingers to pinch the edges of the dough together, forming pleats around the filling. Pinch the top together and press down to seal.

5. Repeat with the remaining dough circles and filling until all the dumplings are made.

6. To cook the dumplings, heat a large pot of water to boiling. Add the dumplings and stir gently to prevent them from sticking to the bottom. Cook for 5-7 minutes or until the dumplings float to the surface. If you prefer a crispy texture, you can pan-fry the dumplings after boiling until both sides are golden brown.

7. To make the dipping sauce, whisk together the soy sauce, rice vinegar, sesame oil, sugar, and minced garlic in a small bowl.

8. Serve the dumplings hot with the dipping sauce on the side.
